Ingredients:
- Whole Roaster Chicken
- 1 Lemon
- 1 Onion
- 1 Head of Garlic (HEAD, not clove. You'll need the entire head of garlic)
- 4 Rosemary sprigs
- Butter
- Kosher or Sea Salt
- 16 oz. can of Chicken Broth
- And a seasoned skillet
- rope/twine for chicken legs
- Pepper (if desired, I don't always use)
- He called for a skillet in the oven but I'm sure you could use any cooking pan
Heat oven to 425.
Clean the chicken. Don't forget to take out the insides.
Cut Lemon, Onion, and head of Garlic into quarters. (You don't even have to peel the onion or garlic. The Cake Boss just threw it all in there skins and all).
3 sections (of each) for the pan, 1 (of each) for the inside of the bird.
1 sprig of rosemary inside the bird.
Rub butter all over chicken this will make the skin crispy and seal in the juice of the chicken. I also rub the inside of the chicken with butter and some UNDER the skin where I can which makes it even better! Sprinkle and rub the salt all over the bird and tie the legs together so that the lemon, onion, garlic and rosemary do not fall out.
Tuck the remaining sprigs of rosemary between the legs of the bird and one in the pan. Place the chicken in the pan and pour most of the chicken broth into the bottom of the skillet. I usually use more than 3/4 of the can, just enough to almost completely cover the lemon or onion wedges. You can sprinkle a little pepper on top of the chicken if you like but I don't always.
Cook chicken for 50-60 min. on 425. I usually baste every so often but mainly toward the very end after the skin has been crispy just to add a little more moisture at the top.
Once done, the chicken will be incredibly JUICY and sing with lemon and butter flavors. The kids always eat it up and rarely do we have much for leftovers.

This looks awesome. Wow, do you have room for 2 more for dinner. Wait, my husband eats a lot so you may have to make another one. LOL. I'm seriously drooling and I just got done eating dinner. :)
I make a chicken similar to this but I don'u use garlic. I will have to try it and see if that makes it better. Thanks!
OMGoodness it IS delish, Faith! SO SO SO juicy. I can't believe how easy it is to make. I ate the rest of it last night for dinner.

K. Rock - For sure add the garlic. There is something special about fresh garlic. There aren't many recipes where I don't use. We love some garlic in this house! ;)
